Jerseys are the smaller brown cows that produce a richer milk, which is higher in fat and protein. This richness is key to help make very smooth ice cream.


Most ice cream makers use a milk blend sourced from a dairy plants that use Holstein Cows. We use Jersey Cow milk and we get it straight from Double 8 Dairy Farm in Petaluma.
We make our gelato fresh daily. So it has a very smooth texture. The fresher the ice cream the smaller the ice crystals in it, and the smoother the texture
